The Green Labs LLC provides two types of yacon products:
Yacon powder
Yacon (Smallanthus sonchifolius) is a herbaceous native specie from the Andean valleys. The tuberous root of the plant has a sweet taste similar to fruit. Unlike most of the roots and tubers, which accumulate the carbohydrates like starch (glucose polymers), Yacon stores carbohydrate in the form of inulin and fructooligosaccharides (FOS). Yacon dry powder from the root contains between 50-70% (FOS), a type of saccharides that are not metabolized by the human body. Therefore, yacon powder is an ideal food for diabetics and overweight people. In addition, it is a low calorie food, a prebiotic, and a source of fibers.
Yacón Syrup
Yacon syrup has a sweet taste. It is mainly composed of carbohydrates (65 to 70%), water (25%), proteins (1-2%), potassium (1%) and fat (less than 0.1%). The fiber content is equivalent to the percentage of FOS present in the syrup. It has the consistency of honeybee syrup and is dark yellow to brownish in color. Yacon syrup can be used as a natural sweetener to sweeten foods, juices, beverages, desserts, plus among countless others.
