Anacardium occidentale L. is a tropical tree native to the Amazon and northeastern Brazil and southern Venezuela know as cashew tree, caju, anacardo, marañón or merey.
Cashew fruit is a large pulpy pseudo-fruit, known as cashew apple. It contains high concentrations of vitamin C, carotenoids, phenolic compounds, anthocyanin, glycosylated flavonols, anacardic acids, volatile compounds, tannin and minerals.
