IMOs are a mixture of α-(1 → 6) and α-(1 → 4)-linked glucose oligomers with degrees of polymerization from 2–10. They are synthesized by an enzymatic reaction from starch tapioca. IMO is a dietary fiber that exerts positive effects on human digestive health due it acts as a prebiotic. Also, IMO is a sweetener lower in calories than sugar that helps to reduce cholesterol and triglycerides and it does not promote tooth decay due is not fermentable by normal mouth microbiota. IMO is used as sweetener ingredient in cakes, ices, drinks, biscuits, yogurt, snacks, among other applications.
