Agave is a genus of plants belonging to the family Agavaceae native to the arid region between northern Mexico and southern United States.
Agave inulin is a linear and branched fructose chain linked by β-2,1 and β-2,6 linkages, and a degree of polymerization between 25 and 34. Clinical studies have shown that fermentation of agave inulin in the large intestine takes longer than the corresponding fermentation time required for short-chain fructooligosacchaides (FOS). This property of inulin agave improves the fermentation pattern.
