Oils and fats are made mainly of triglycerides (TGAs). Chemically, TGAs are molecules based on glycerol backbone and three fatty acids esterified in the three-hydroxyl groups of glycerol. The chemical, physical, and nutritional properties of the oils are determined by the fatty acid composition and the distribution of them in different triglycerides.
Medium-chain triglycerides (MCTs) are triglycerides whose fatty acids have an aliphatic tail of 6–12 carbon atoms.
MCTs are composed of a glycerol backbone and three fatty acids: Caproic acid (C6:0), Caprylic acid (C8:0), and Capric acid (C10:0). These fatty acids are referred to as medium chain fatty acids (MCFAs).
MCTs have various applications in the nutraceutical and food industries for the development of nutritional supplements and superfood.
